Play the 50 states license plate (looking for them as you drive) whoever gets the most at the end of each day wins rights to a shower first or (something else)With each state if it has any letter is it like "REP" everyone has to make up names for the letters ie... Really Enjoys Peeing. Then ask questions about the state and what everyone knows. moving on to other conversations until they die down.
If there's a chance you may marry the man, take the opportunity to get better acquainted with your potential future in-laws. :) Otherwise, make polited small talk, then sleep. If you are driving, turn the radio on to something they'll enjoy, too, and get lost in thought. Tell them you just can't concentrate on driving and conversation at the same time - sorry!
Download a bunch of video podcasts / movies and stick your ipod in your ears.

How well do you know his parents? Ask them to share some childhood experiences their son had. Try to focus on the humorous ones. Moms always enjoy talking about their sons.

A long car ride with "The Parents"? You're domned! Do whatever you can, make whatever excuse. You really need to fly.
You could always ask his parents what their favorite memories of their son were when he was little. Parents can go on hours about this. They will be happy talking about it and tou will learn some fun info AND win a few brownie points with them!
